APPLE RHUBARB FIG CRUMBLE

Delicious! Warming! Healthy! What’s not to love?

This recipe came about at the request of my boyfriend. He has always loved traditional apple crumble and so I was determined to make sure he could enjoy it with a healthy twist. This dish is so healthy, it can be eaten for breakfast – like a spiced fruit nutty granola! Enjoy with a dollop of coconut yoghurt, cashew cream, coconut cream, drizzle nut butter, or simple on its own.

It can be made as straight apple crumble, or apple rhubarb, apple fig, rhubarb fig, even berries… endless flavour possibilities! You can also replace the oats with quinoa flakes if you are sensitive to gluten and can’t source gluten-free oats. Get creative, alter to your needs and tastes, and as always, eat with joy!

Ingredients

For: 6 serves
  • 4 medium appless chopped
  • 3 figss sliced
  • 1 bunch rhubarb chopped
  • 1 tsp vanilla extract/powder/bean
  • 2 tbsp stevia
  • 1 tsp ground all spice
  • 1/2 lemon zest
  • 1/2 cup water
  • 1/2 cup rolled oats
  • 1 cup LSA
  • 1/2 cup dessicated coconut
  • 1/4 cup flaked almonds
  • 1 tsp vanilla
  • 2 tbsp maple syrup
  • 1/3 cup coconut oil
  • 1/3 cup walnuts chopped
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger grated
  • 1 pinch sea salt

Instructions

  1. Preheat the oven to 180°C. In a medium saucepan, combine the apple and the water. Bring to boil on high and then reduce heat to medium. Cover and simmer for 4-5 minutes, until almost tender. Add the rhubarb, fig and stevia to the apple mixture. Stir for 2-3 minutes, or until rhubarb is just tender. Drain any excess liquid before spooning the mixture into a bowl. Stir lemon zest, all spice and vanilla powder/extract through. Transfer mixture to a lined baking dish and spread fruit filling evenly. For the crumble, combine LSA, salt, cinnamon and melted coconut oil in a medium bowl. Stir until mixture resembles breadcrumbs. Add the remaining crumble ingredients and stir through. Pour the crumble evenly over the fruit mixture. Top with any additional sliced fruit, rose petals or nuts. Bake 25-30 minutes, until crumble is golden. Serve warm with greek or coconut yoghurt, coconut milk/cream or enjoy on its own!
