The avocado makes it creamy, the miso is a nice twist that adds richness and earthiness, and of course, lemon should be in every dressing! Throw this on top of crisp, crunchy cos or rocket and add some lentils and seeds for a killer side salad!
- 1/2 avocado
- 2 lemons juice only
- 1 tbsp miso paste (preferrably unpasturised, gluten-free variety)
- 1/2 tsp sea salt and black pepper
- 1/4 - 1/3 cup water
- Throw all ingredients in the blender, adding more liquid if you prefer it thinner.
