Blissful Easter Eggs/Truffles

Blissful Easter Eggs/Truffles
Serves: 12 large

I made these as healthy "Easter eggs" for Easter, but they can definitely be made into truffles/bliss balls for any occasion! Raw. Vegan. Gluten free. Dairy free. Sugar free! These will definitely satisfy a sweet craving.

Ingredients

For: 12 large
  • 1/2 cup cashews 
  • 1/2 cup desiccated coconut 
  • 1/4 cup almond meal 
  • 1/4 cup cacao butter 
  • 2-3 tbsp coconut milk 
  • 1 tbsp  stevia 
  • 1 tsp vanilla essence/powder  or vanilla beans, seeds scraped
  •  pinch sea salt 
  • 1/2 cup walnuts 
  • 1/2 cup dessicated coconut 
  • 1/4 cup almond meal 
  • 1/4 cup cacao butter 
  • 2-3  tbsp  coconut milk 
  • 2 tbsp cacao powder 
  • 1.5  tbsp  stevia 
  • 1 tsp vanilla essence/powder  or vanilla beans, seeds scraped
  •  pinch sea salt 

Instructions

  1. Process the above ingredients (one flavour at a time) in a food processor, adding the milk as you go.
  2. Roll into egg-sized balls and cover in your favourite fun toppings: cacao nibs, chopped nuts, desiccated coconut, cacao powder, flax or chia seeds!
  3. Refrigerate.
