Lemon Macadamia Cheesecake Smoothie Bowl

Enjoy this fruit-free smoothie for breakfast or a snack. Cooling, sweet and refreshing!

Ingredients

For: 1
  • 1 serving Vanilla Protein Powder I use NuZest Vegan Smooth Vanilla
  • 3/4 cup coconut milk
  • 1/4 cup soaked macadamias (for at least 2 hours)
  • 1 lemon juice & zest
  • 1/2 tsp vanilla powder/extract/beans
  • 1 tsp stevia optional
  • 1 cup ice

Instructions

  1. Blend the above ingredients in a high-speed blender, use more ice if you desire a thicker texture, or more coconut milk for a thinner texture.
  2. Top the bowl/smoothie with a few extra macadamias, lemon zest and shredded coconut!
