Strawberry & Vanilla Chia JamJune 13, 2015
Jam is one of those comfort foods you probably thought you had to say goodbye to when you decided to live clean and healthy. Not true! Chia is a true gift, providing important omega-3 fatty acids and allowing us to create the exact consistency that sugar-ladden jams offer! How amazing is that! Really, there is no need for the “real thing” once you see how easy and tasty chia jam is. Strawberries are by no means the limit, try blueberry, blackberry, raspberry and even citrus fruits or figs! Think of your favourite flavour and give it a go. Chia is nature’s jam!
Ingredients
For:
- 500 g frozen strawberries
- 3 tbsp chia seeds (I like using white chia, but any will do)
- 1 vanilla bean halved, seeds scooped
- 1 tsp stevia optional
Instructions
- Method Chop the berries roughly and heat them in a medium sized saucepan over medium heat. Add a drop of water and allow them to boil. Add vanilla bean seeds. Reduce to a simmer for 10 minutes. When it has formed a thick strawberry "stew", remove from the heat and transfer into your jam jar. Combine with the chia seeds, stirring thoroughly. Allow to set in the fridge for at least 1 hour, but best overnight. Add stevia once set, so you can taste how sweet you require it. Keep in the fridge in an airtight jar.
