Simple way to jazz up your salads… pumpkin seeds boast zinc, magnesium and potassium making them great for cell growth, glowing skin, reproductive health, immunity and bone health. Scatter through salad for a crunchy crouton replacement or enjoy a handful as an easy tasty snack.
- 1/2 lime juice + zest
- 1 tsp coconut oil
- 1/2 tsp cracked black pepper
- 1/3 cup pumpkin seeds
- Prehea the oven to 180 C. Squeeze 1/2 lime + zest, cracked pepper & 1 tsp coconut oil over 1/3 cup pumpkin seeds in a mixing bowl, and toss through.
- Bake for 8 minutes, remove and move seeds around, and return to the oven for a further 5 minutes.
- Remove from oven and allow to cool.
